I'm surprised how much I enjoyed this dish. It's hearty and full of flavor. Initially, I worried the tomatoes would overpower things {I prefer just a touch of sauce on pizza, pasta, etc...}, but my worry was for naught. The herbs and veggies blended so nicely it never felt over-tomatoey. Like the soup I made a few weeks ago, this dish involves a bit of prep work but it's well worth the effort. One task included blanching and peeling the tomatoes, something I've never done before. The list of ingredients includes eggplant, tomato, carrots, celery, thyme, cilantro and more. Healthy, healthy.
Unfortunately, as I scurried around to clean up before bedtime I overcooked my recipe just a touch. I forgot to check on them and the next thing you know my timer went off. It cooked at the recommended heat and time, but I would have pulled it about 10 mins early. More cheese is the only edit I might make and this dish could be edited to include so many delicious ingredients ~ bacon, rice, ground meat, or any other combination of bits and herbs. I'll definitely make it again.
Emerson, 4 1/2: The closest she came to enjoying this dish was running by and stealing chopped sweet potato to munch on. She's loves raw veggies. She also tried the shredded Emmental ~ a first for her ~ but didn't like it. As far as the finished product, she surprised me and tried it but wrinkled her nose. Didn't like it.
Max, 2 1/2: Because sister did, he wanted to try the cheese, and liked it! His response to the finished dish: I don't like that. It never touched his lips.
